Asparagus and Mushroom Rice – One cup of raw rice is enough for four servings and, with the addition of 1/2 lb of mushrooms and about 1/4 lb of asparagus, you’ve got your vegetable allotment as well.

Cooking for one is challenging cause you always have leftovers so it’s nice to have something that you can portion and freeze away. I’ve also frozen risotto and even cooked sushi rice with good results.
