I decided to combine the two celebrations, as they’re so close together, and make a nice meal for one (or two). A spatch-cocked little chicken was roasted and served with corn and spinach malfatti. Simple and tasty.
Dessert … well, I went a bit overboard there. I bought a 3 pack of fruit (2 blueberries and 1 raspberry for $5), mainly because I wanted to make blueberry muffins and came up with two fast and easy “red/white and blue” themed desserts.

Happy Canada Day and The Fourth to you too. We celebrated in the US with friends, it was lovely. I bought some lovely little panna cotta moulds a while back, will use them soon for a light summery desser.
It’s nice to celebrate the holidays with our friends across the border.
Most of the time, I’m too lazy to turn out the panna cotta and just dig into the cups. I like that you can make a bunch in those little plastic cups and take them to a picnic. No breakage and just toss them at the end. No clean up. 🙂
